Margarita Madness!
Traveling with family, friends, Special Events!​

Pomegranate Margarita
1.5 oz Tequila 3 Generaciones (Plata)
1 oz Cointreau
1 oz La Pinta (pomegranate-infused tequila)
1 oz lemon juice
Splash grenadine syrup  
Shake ingredients together with fresh ice cubes, serve immediately. NOTE:  La Pinta substitute: PAMA Liqueur instead.  Makes 1 margarita


 Jalapeño Margarita
A delightfully spicy yet refreshing treat to beat the Los Cabos summer heat.  Ingredients for the Jalapeño Margarita
1 ½ oz Tequila Reposado
½ oz Orange Liquer
½ oz Agave Nectar
1 T Lime juice
½ jalapeño pepper
Preparations for a Jalapeño Margarita: In a shaker put lime juice (important-remove the seeds) and jalapeño pepper and crush. Then add the agave nectar, tequila & orange liqueur, fill with ice, stir 10 seconds. Strain into 10 oz frosted glass w/ice, salt rim. Garnish with ½ a jalapeno pepper.


Watermelon Mojito
1.5 oz white rum
1 oz grenadine
8 spearmint leaves
½ lemon (cut in 3 parts)
3 oz watermelon (in chunks)  
Place ingredients in glass except rum. Muddle or crush ingredients at bottom of glass with fork, spoon, muddler. Add rum and ice cubes to fill the glass. Shake, garnish rim with a watermelon piece. Makes 1 Mojito


Mango & Pineapple Mojito
1.5 oz Bacardi Rum
1 oz Pineapple juice
Slice of fresh mango
Splash of lime juice
Splash of simple syrup
Fresh Spearmint leaves
Club Soda  
Place ingredients in glass except club soda. Crush together at the bottom with fork, spoon or muddler. Add ice and Club Soda to fill glass. Garnish with a lime wedge. Enjoy!


Classic Margarita (Traditional, but always a favorite! ) - Makes 1
1.5 oz Tequila 3 Generaciones (Plata)
1 oz Cointreau
1 oz lemon juice (fresh squeezed)
splash grenadine syrup
ice cubes  
Shake ingredients together with fresh ice cubes, serve immediately. For a more refreshing twist, add a splash of grapefruit or lime flavored soda

Sangrita
Bring the best out of 100% agave blanco tequila with this traditional non-alcoholic accompaniment. Rather than mixing tequila into the cocktail, Sangrita is a paired beverage alternating sips of good tequila and bright Sangrita. A well-made Sangrita highlights the crisp acidity of the tequila while cleansing the palate between each sip.  Sangrita Ingredients:

18 oz Tomato juice
12 oz Orange juice
2 oz Grenadine
1 oz Lemon juice
15 drops Maggi sauce
​15 drops Worcestershire sauce
15 drops Tabasco sauce
Pepper to taste
Salt to taste
Mix all ingredients, then chill the Sangrita. To serve, pour tequila and Sangrita into separate glasses. The two should be alternately sipped, not chased.  Makes 34 ounces of Sangrita

Sexy Coffee, Mexican Coffee
1oz. Tequila Blanco
0.5 oz. Kahlua
6 oz. Black coffee
1 whipped cream
Cinnamon powder
Sugar  
Take large glass, dip glass edge in water then in sugar. Put glass above flame to caramelize the sugar rim. Flambe the tequila & Kahlua and serve in glass with sugar rim. Add black coffee, whipped cream, top with cinnamon! (choice of several liquors and beverages of your choice!

The Navy Grog Cocktail
The Big Daddy of high-octane Tiki drinks, this cocktail dates back to the early days of legendary bartender Donn Beach. The original recipe, packed with 3 types of rum, calls for an ice cone garnish, (requires a bit of planning & freezer space.)  Streamline with a simple mint sprig and lime wheel.
1 oz Gold Demerara rum, such as El Dorado
1 oz Dark Jamaican rum, such as Appleton Estate
1 oz White Cuban or Puerto Rican rum, such Bacardí Superior
3⁄4 oz fresh lime juice
3⁄4 oz fresh grapefruit juice
3⁄4 oz soda water
1 oz honey syrup (equal parts honey / water)
Add all ingredients into a shaker with crushed ice, shake til well-chilled (~ 30 seconds). Strain into a chilled rocks glass with fresh crushed ice. Garnish with a mint sprig.
​Toblerone Cocktail - a classic candy bar to drink your dessert! "chocolate, nutty, creamy, decadant"

  • 3/4 ounce Baileys Irish cream
  • 3/4 ounce Frangelico (Italian liquor with hazelnut flavor)
  • 3/4 ounce Kahlúa (produced in Mexico)
  • 1/2 ounce honey syrup
  • 1 ounce heavy cream
  • Garnish: chocolate syrup, to rim glass
  • Garnish: Toblerone chocolate, freshly shaved 
Steps:
  1. Place chocolate syrup in shallow bowl or on a plate. Dip rim of the cocktail glass in the chocolate, put in fridge to chill.
  2. Add the Kahlúa, Frangelico, Baileys, heavy cream and honey syrup into a shaker with ice and shake until well-chilled.
  3. Strain into the prepared glass.
  4. Garnish with freshly shaved Toblerone chocolate.
*  Kahlúa:  produced in Mexico with rum, sugar, and Arabica coffee

Sunshine's Killer Bee*, Nevis
(Most Famous Drink in Nevis: Pinney’s Beach, Nevis)

Mix ahead of time:
  • 2 tablespoons honey
  • 1/4 cup orange juice
  • 1/4 teaspoon black pepper
  • 1/4 cup club soda
  • 1/2 cup light rum
  • 1/2 cup passion fruit juice
  • Nutmeg, starfruit and lime, for garnish​

Direction for two servings:
Directions: 
1. In microwave-safe bowl, microwave honey and 1 tablespoon water 30 seconds or until honey is dissolved.
2. Stir in rum, juices and pepper; divide evenly between glasses with ice
3. Top with club soda
4. Garnish with nutmeg and fruit. Raise glass, toast

The Killer Bee cocktail is by far the most popular beverage on the island of Nevis. Sunshine’s is so secretive about the drink he mixes the cocktail under the bar to hide the mix from curious eyes. While not exact, it is the closest thing you will find…after a few you won’t notice anyway, right?

Gin & Tonic Twists​

A Bloody Button Mary is a twist on the traditional Bloody Mary, it's not too different in the basic ingredients, it does stray in its construction and even this is subtle. What isn’t subtle is the exotic ‘kick’ you get from the Szechuan button. Ingredients:
1/2 fresh Lime Juice
3 Szechuan Buttons
6 cups low-salt V8 Juice
3 tbsp Worcestershire Sauce
1 1/4 tsp Hot Pepper Sauce
3/4 tsp Salt
1 1/2 cups Vodka
Sugar for garnish
Serves 8
Squeeze lime juice into a pitcher, add veggie juice, Worcestershire sauce, chopped up szechuan buttons (really, really minced), pepper sauce and salt.  Chill.  When ready, stir in vodka and serve over an ice cube in a small glass ‘rimmed’ with a mixture of salt, sugar and more minced szechuan buttons.  Garnish with a carrot stick and green bean sliver and if you are truly decadent add a button!
The Verbena Cocktail
1 1⁄2 oz Herradura blanco tequila (my best brand)
3 oz Yuzu-calamansi sour mix*
1 oz Ginger syrup**
6 leaves Lemon verbena

​ Combine lemon verbena leaves & ginger syrup in cocktail shaker & muddle. Add remaining ingredients, ice, shake til well-chilled. Strain into double rocks glass filled with fresh ice.  Garnish with a Szechuan button.
*Yuzu-calamansi sour mix: Combine 1 cup water and 1 cup sugar in a saucepan. Heat slowly, stirring until sugar dissolves. Remove from heat and let cool. Combine with 1 cup freshly squeezed yuzu juice and 1 cup freshly squeezed calamansi juice.
** Ginger syrup: Combine 1 cup water, 1 cup sugar, 1/4 pound ginger, peeled and thinly sliced, in a saucepan. Heat slowly, stir til sugar dissolves. Simmer 30 min. Remove from heat, let cool, strain out solids.

Make Your Own Ginger-Beer
Smoothies For Hot Summer Days!
​
3/4 cup DOLE or Other Pineapple Juice or Pine-Orange Banana Juice
1 carton (6 oz) strawberry yogurt
1 ripe DOLE or other Bananas, sliced
Optional: a shot (or double shot) of your favorite spirit
Combine pineapple juice, yogurt, banana in blender or food processor. Cover, blend until thick and smooth. Serve immediately!
Marionberry Gin & Tonic
12 farm fresh Marionberries (save 3 for garnish)
½ oz. fresh squeezed lime juice
1 oz. simple syrup or LESS for diabetic, love your berry flavor
1½ oz. gin
2-3 oz. tonic water
Muddle 9 Marionberries with lime juice at the bottom of a cocktail shaker. Shake 10 seconds. Fill a collins glass with ice. Double strain into serving glass using a strainer (you don’t want seeds.) Add tonic water, stir gently. Garnish with a few Marionberries and sprig of fresh mint (try pineapple, orange or chocolate mint leaves!)* grow your own indoor plant!) DID YOU KNOW:  Kahlúa
the key ingredient in a number of popular cocktails, including the Mudslide/the Black Russian/the White Russian and more! But what's in it? A combination of rum and coffee beans created in Veracruz, Mexico, in 1936, the name derived from old Arabic slang for coffee. It can take up to 7 yrs to produce a bottle of Kahlúa, allowing time for growing & drying the coffee beans and distilling the rum. As of 2019, it was the fifth biggest-selling liqueur worldwide.

Fuzzy Nipple
  • 1/4 ounce grenadine
  • 1/2 ounce sambuca, chilled
  • 1/2 ounce Irish cream liqueur
Steps
  1. Add the optional grenadine into a shot glass
  2. Layer the sambuca on top by slowly pouring over the back of a spoon (or add it into a shot glass, if not using grenadine)
  3. Layer the Irish cream on top with the same spoon
* for a Buttery Nipple: use butternut scotch schnapps!
